Healthy Tuna Sandwich


A great no-cook summer appetizer treat.

Here’s a quick mid-week recipe that you can whip up in a couple minutes flat. I love this recipe. I added fresh lemon juice for tartness, chopped onions and celery for crunch. Season the mixture generously with salt and pepper, and you’ve got a fresh tuna sandwiches that is packed with flavor. Don’t miss the ketchup!

Here is the Healthy Tuna Sandwich Recipe:
Ingredients: 
Tuna in water                       – 2 cans (6 oz each, I used sandwich flaked Tuna)
Medium stalk celery              – 1
Small onion                          – 1
Lemon juice                         - 1 tsp
Salt                                      - ¼ tsp
Pepper                                 – ¼ tsp
Slices bread                          – 8 ( Used canapé bread)
 Method
  • Drain the tuna in a strainer. Chop the celery to measure 1/2 cup. Peel and chop the onion to measure 1/4 cup.
  • In a medium bowl, mix the tuna, celery, onion,  lemon juice, salt and pepper. If you want you can add green chilies or any herbs of your choice, its optional.
  • Spread tuna mixture on the bread slices.

I like to serve this tuna on an open-faced sandwich on whole grain canapé bread or on toast. Super filling, heart healthy and so yummy! Your body and your taste buds will both say “thank you.”

Prawn Jalfrezi



Prawn jalfrezi is a popular Indian dish that is easy and fast to make. As this is a restuarant style curry, so if you want you could cook the prawns ,prepare them in advance.



Jalfrezis were invented in the days of the British Raj as a way of using up leftovers. If you would like to read a little more about the concept behind jalfrezi curries, take a look at jalfrezi recipe here. 
This is one of the most favorite seafoods - the prawns jalfrezi. The word Jal in Bengali means ‘pungently spicy’ and Frezi means ‘stir-fry’.

  It’s a stir-fry that is packed with spices that is also quick and easy to make. Prawn curry fans who like a bit of spice will love this curry. The peppers, onions and green chillies add a nice crunch to the recipe that really works great.


A really tasty dish, rich with very good flavours as well as the wonderful spices of Jalfrezi. 

Ingredients:

Prawns – 1kg
Salt – to taste
Lemon juice – 4tsp
Turmeric powder – 1tsp
Red Chilli powder – 1tbsp
Oil – ¼ cup
Ginger – 2tbsp julienned
Garlic – 4tsp chopped
Onions 1 1/4 cups chopped
Tomatoes chopped – 1 ½ cups
Cumin powder – 1tsp
Pepper powder - 1/4 tsp
Tomatoes – cut into cubes ¾ cups
Onions – cut into ¾ cup
Green coriander chopped – 2tsp

Method:

Clean the prawns and marinate in a mixture of salt, lemon juice half the turmeric powder and red chilli powder. Saute for 2-3 minutes. Heat oil in a pan. Add ginger and garlic; sauté for a minute. Add onions and sauté further till light brown. Add chopped tomatoes, cumin powder, pepper powder and remaining turmeric and red chilli powder. Stir in the prawns and cook until three-fourth done. Add tomatoes, capsicums and onions. Mix well and cook further until the prawns are done. Remove from heat and serve hot, garnished with green coriander.


The prawns taste delicious. Simply divine!

Grilled Hammour with Sautéed Garlic Asparagus




Looking for a simple fish dinner? Try this easy recipe for grilled fish fillets. Grilled Hammour with Sautéed Garlic Asparagus. 



Hammour is the Arabic name for Grouper fish. It is commonly found in the waters of the Persian Gulf and is the fish of choice in a lot of Arabian cuisine. It is one of the best fish for grilling, because it is so soft and can take on so many different flavors. Grilled Hammour can complement a perfect menu for any party.





Here's a recipe which is loaded with garlic, ginger and different sauces that flavors the fish very nicely . If you cannot find hammour you can replace it with salmon, king fish or  can use any firm white fish of your choice.

Ingredients:
  • Hamour or Salmon slices (not too thick or too thin, u can use any fish) 
  • Roasted Honey garlic Bar B-Q sauce – 1 to 1 ½ tbsp (I used Kraft brand, in Dubai)
  • Worcestershire sauce - 1 tbsp
  • Lemon juice – 1 tsp
  • Pepper powder – ½ tsp (add according to your taste)
  • Ginger garlic paste - 1 to 1 ½ tsp
  • Paparika powder – 2 – 3 tsp
  • Soya sauce – 1tbsp
  • Salt as required (remember we r using soya sauce so add salt accordingly)
Method:
Mix above the ingredients from 2-9 well and then marinate nicely in washed and pat dried fish slices. Keep in fridge for half an hour to one, so that it blends well with fish slices… after half an hour take out and grill it for 5 to 10 mins…Pls be ready for a yucky smell all over your  house, but this will definitely  taste good after grilled well. Decorate with white sesame seeds.

Sautéed Garlic Asparagus
Ingredients:
  • Butter – 1 -2 tbsp
  • Bunch of fresh asparagus
  • Garlic cloves – 2 – 3 chopped
Directions
Melt the butter or margarine in a large skillet over medium-high heat. Add the garlic and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender. If you like your asparagus well done, reduce heat and cook an additional 10 minutes.





This is a wonderful and delicious preparation, served with sautéed garlic asparagus.

Spicy Squid Roast (Kerala Style)



Another Kerala style seafood delicacy.For all seafood lovers .




There is something mystical about this spicy squid roast / kanava roast, the aromas awakens your senses which in turn fires your appetite and it is hard to resist the temptation of this spicy rich preparation. This is one of my hubby's favorite dish.




Today I am sharing the recipe of Kerala style spicy squid roast. It is also know as Koonthal Roast / Kanava Roast /Calamari Roast,which is a very tasty and easy to prepare . Surely you all will like this awesome squid roast.





Here is the recipe:

Ingredients 

Cleaned Squid-!/2kg
Shallots-15
Tomato-2 medium size
Ginger- 1 inch thick
Garlic- 4-5
Turmeric powder- 1/2 tsp
Chilly powder-1 tsp
Pepper powder-1/2 tsp
Garam Masala- 1/2 tsp
Fennel powder- 1/2 tsp
Kudampuli / cambogia - 2-3 piece
Curry leaves-1string
Coconut Oil
Salt-to taste

Method

Heat oil in a pan and add chopped ginger and garlic followed by chopped onion and curry leaves. Saute till golden brown. Add chopped tomatos and saute till it get mashed up and soft. Add turmeric powder, chilly powder, pepper powder, kudampuli and garam masala.Add cleaned squid and little water( 1/3 cup)cover and cook for four to five minutes and till water evoporates. Fry till all the masala gets coated with the squid.Serve with rice
